Lemon Poppy & Sesame Seed Cookies

Bright, buttery, and chewy with the loveliest little crunch — these vegan lemon poppy and sesame seed cookies are sunshine in cookie form. The lemon is subtle, not sour, and the poppy and sesame seeds add a nutty bite that sets them apart from any lemon cookie you've had.
These are NOT your grandma's lemon cookies (though we're sure hers were a hit). One batch never survives the weekend in our house.

Directions
- Preheat the oven to 300°F.
- In a medium bowl, whisk together the flour, sea salt, baking soda, lemon zest, poppy seeds, and sesame seeds.
- In a large mixing bowl, cream the vegan butter and sugar together until well combined. Add the egg replacers and beat until fluffy, then add the lemon extract and beat again.
- Stir the flour mixture into the butter mixture just until combined.
- Line a baking sheet with a reusable silicone mat or parchment paper. Use a cookie scoop to portion the dough onto the sheet.
- Bake for 20–25 minutes, or until lightly browned at the edges.
- Let the cookies cool for several minutes on the pan before moving them to a wire rack.
